So it takes culinary vision to convince folks that vegetarian fare can be just as good or, gasp, better than brisket or fried chicken. Since Living Kitchen opened in Historic South End in 2010, it has been doing just that. Serving organic, plant-based dishes, the restaurant, which now has a second location across from SouthPark Mall, reimagines meaty entrees like sushi, burritos, pad thai and even BLTs into meat-free meals using alternatives like cashew cheese, mushrooms and sweet potatoes. Although some plates stay on the menu year-round, others, like this soup, are seasonal. This winter, make a batch yourself, then curl up like a cozy couch (sweet) potato. I N G R E D I E N T S On medium heat, add oil to the pot, then add the garlic and shallots. Once the garlic and shallots start to sweat, add onion, celery and carrots. Once the vegetables become translucent, add the sweet potatoes and pears. Saute until soft and hot. Add apple juice. Add the bundle and water. Bring to a boil, then let simmer covered for 25 minutes. Remove the bundle. Blend the mix until smooth. Finish with cashew sour cream, pepper and salt. Garnish with sour cream. P R E P A R A T I O N 8 ounces peeled and chopped carrots 8 ounces celery 2 ounces chopped garlic cloves 2 ounces chopped shallots 1 pound chopped onions 3 pounds chopped sweet potatoes 1½ pounds peeled and chopped pears 2 liters water 1 ¼ ounces extra virgin olive oil 8 ounces cashew sour cream 26 grams salt 1 pinch black pepper Bundle together two Bay leaves, one sprig of thyme, 1/8 bunch parsley, ½ ounce peppercorns 1_ 2_ 3_ 4_ 5_ 6_ 7_ 8_ 9_ 10_ The soup has a seven-day shelf life!
