INGREDIENTS
1 clam blackberries
1 cup sugar
½ cup water
¾ cup apple cider vinegar
3 stems rosemary
PREARATION
Blackberry Shrub
• Combine blackberries, sugar, water and rosemary.
• Heat over stovetop until blackberries start to dissolve.
Mixture should not thicken. If thickening occurs,
gradually add more water.
• Remove from heat and add apple cider vinegar.
• Put mixture through cheesecloth to strain out herbs and
fruit, discarding remnants.
• *Note: Remaining juice will remain fresh for up to two
weeks in refrigerator.
Assembly
• Combine rum and blackberry shrub in cocktail shaker,
shaking thoroughly.
• Smoke Collins glass with dry rosemary while assembling
cocktail.
• Strain rum and blackberry shrub mixture into Collins
glass and top with soda water.
• Garnish with flamed rosemary.
