LOBSTER
ROLL
(Yields 2 servings)

Ingredients
2 lobsters (approximately ¼ pound each)
2 lemons, halved
Zest and juice of 1 lemon
¼ cups mayonnaise
1 teaspoon chives
1 teaspoon parsley
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon salted butter
2 cups mixed greens
2 New England-style split-top hot dog buns
Preparation
• Fill large stock pot with
water and halved lemons
and bring to boil.
• Add lobsters to boiling
water, cooking for 10
minutes.
• With tongs, remove lobsters
and immediately submerge
in ice bath for at least 15
minutes.
• Cut each lobster tail in half
length-wise and remove
meat.
• Crack each lobster claw
with meat mallet, lobster
crackers or the back of a
knife and remove meat.
Avoid shell fragments.
• Cut meat into large chunks
and set aside.
• In mixing bowl, stir together
mayonnaise, lemon zest and
juice, chives, parsley, and
salt and pepper.
• Fold lobster meat into
mixture and adjust
seasoning as needed.
• In large nonstick pan, melt
butter and toast each side
of each bun.
• Once toasted, open buns
and fill with greens and
lobster mixture. Enjoy!
