Ingredients
Pizza Dough
3 1/2 cups unbleached, unbromated
high-gluten flour
1 1/2 cup warm water
2 teaspoons fresh baker's yeast
3 teaspoons extra virgin olive oil
1 1/4 teaspoon sea salt
Toppings
1 cup chopped spinach
1 teaspoon minced garlic
1/2 cup shredded parmesan cheese
2-3 cherry tomatoes, halved
Preparation
• Combine flour and salt in mixing bowl;
in separate, bowl mix warm water, yeast
and oil and add slowly to flour mixture.
• Mix all ingredients for about 5 minutes
(by hand) or high speed for about 1
minute in mixer.
• Transfer dough into different container,
cover with towel and let rise at room
temperature for about one hour or until
dough nearly doubles in size.
• Boil water, add spinach and cook about 5
minutes. Dry all water on spinach before
chopping.
• Mince 2-3 garlic cloves and add one
teaspoon olive oil.
• Once dough is ready, transfer to oiled
pan and shape inside pan. Dough should
be flattened only from the bottom using
your hands. Poke dough with your
fingers before placing toppings on top.
• On top of dough, add pinch of sea salt,
one tablespoon olive oil, minced garlic,
chopped spinach, halved tomatoes and
parmesan cheese.
• Transfer to oven and bake at 375 F. Note:
Right before putting dough into oven,
poke one more time with fork in a few
different places.
• Bake for approximately 20-25 minutes
until golden brown.
